Sweet & White Potato Spears

I love Sweet potatoes! I love potato spears! I think the mixture of these two types of potatoes sound amazing! Cut the calories and fat by trying light dressing and light cheese.

Sweet & White Potato Spears

1 1/2 lb ~ Sweet Potato (about 3)

1 1/2 lb ~ Idaho or Russet potatoes (about 3)

1/2c ~ Zesty Italian Dressing

1/4c ~ Grated Parmesan Cheese

2 Tbsp ~ chopped fresh parsley

1.  Preheat oven to 375

2.  Cut potatoes into spears. Toss Potatoes with dressing.

3.  Place spears on lightly greased baking sheet or 15 x 10 x 1 baking pan

Cook for 30 mins. Turn potatoes. Cook for an additional 30 min. Sprinkle with cheese during the last 5 mins. Sprinkle with Parsley when finished.

Makes 8 servings
